The Quantitative and Qualitative Analyses of Bioactive compounds in Persimmon (Diospyros kaki)

The persimmon (Diospyros kaki) is a commercially important fruit crop and it contains a big amount of useful compounds such as phenol compounds dietary fibers, vitamins, minerals and so on. Persimmon also contains a big amount of sugar and because of that its properties of taste and biological value are increased. The aim of research was to do the quantitative comparision of phenolic compounds, which were received on the various stages technological scheme during making the persimmon juice and comparing these phenolic compounds’ extraction capability. The object of the research is the wastes of persimmon’s variety – Sharon, which is cultivated in Spain, Mediterranean area. These wastes are received during 5 different technological stages. The objectives where: 1. To choose effective solvent, which would extract phenolic compounds from the wastes received on 5 different stages maximally effectively. 2. Extracting phenol compounds from the wastes of those different stages using the chosen effective solvents and determining them quantitatively. The results of research are: 1. The wastes received on the various stages of technological scheme of juice industry, are different from each other with content of phenol compounds. The wastes received on the stages I (Rechazo-decanter) and IV (Tratamiento Enzimatico) contains the most phenol compounds. Then the next stages according to the amount of phenol compounds are II (Rechazo) and V (Tamizado). 2. The extraction of phenol compounds from the wastes received on different stages of technological scheme depends on the type of solvent. Extraction phenol compounds from the wastes received from I (Rechazo-decanter) and II (Rechazo) stages is most effectively with water. Extracting phenol compounds from the wastes of the stages III (Triturado Molino) and V (Tamizado) is most effectively done with ethyl acetate. The conclusion is that the wastes of persimmon, received on different stages of technological scheme of juice industry are different from each other not only quantitatively, but with extraction capability too. The work was performed with the support of Tempus project (#159340 Tempus-1-2009-1-ES-Tempus-JPCR - “MAPB”) in Spain, Elche, Miguel Hernandez University.
